I figured it was about time for a new cocktail recipe. We are in the heart of summer and I don’t know about you, but I am savoring every second I can outdoors. When the sun starts to dip in the sky and the wind picks up you know it is natures hint to begin whipping up a tantalizing cocktail to start the evening off on the right note.

Though I am a mojito girl through and through I decided it was time to broaden my horizons and my cocktail shaking abilities. Last summer I was on a grapefruit kick and made these, I used strawberries in these amazing margarita’s that I made repeatedly early in the summer, so what was left? ..lemons? but they are so boring and are used in every drink. However, are they really used to their full capacity?

I figure if I’m going with lemons I am going to use lemons and not just as a tiny wedge to gardish the glass. So I began squeezing the juice out of a bag full of lemons. Half by half, I squeezed. I took a phone call and continued to squeeze while I chatted. Then I squeezed some more. 16 halves later I had huge biceps, and a cup full of lemon juice.

It’s like they say ‘When life give you lemons, make lemonade, then add vodka, stir and sit back and enjoy.’ Wait a second, is that not the quote? …Well it should be.

This lemonade is knock your socks off good on its own. When you add liquor, a sprig of mint, and lush raspberries you enter a new dimension.

Spiked Summertime Lemonade

1/3 Cup Honey
2/3 Cup Sugar
1 Cup Water
1 Cup Lemon Juice (about 6 to 8 lemons)
3 Cups Water

To make the simple syrup: In a small saucepan combine the honey, sugar and one cup of water. Gently stir over medium heat until sugar had dissolved. Let mixture gently boil for 3 minutes longer to slightly thicken. Remove from heat and let cool.

Juice 6-8 lemons, enough for 1 cup of juice. In a large pitcher combine the cooled simple syrup, the lemon juice and 3 cups of cold water. Stir to combine then refrigerate until ready to mix drinks.

Spiked Lemonade
Vodka (1.5oz)
Lemonade (3oz)
Champagne (or Prosecco) (1oz)
Fresh Raspberries
Mint leaves

Muddle several mint leaves in the bottom of a cocktail glass. Fill glass with ice. Pour in vodka and lemonade. Give the drink a good stir. Place 2-3 raspberries in the glass and a slice of lemon. Top with champagne. Sip and enjoy summer!
