I know, I know, I’m all about organic vegetables and green household products and then I go and make cupcakes loaded with red food coloring and topped with peeps. But really I just couldn’t resist!! Valentine’s day only comes once a year! And I’m just a sucker for red and pink hearts, and SPRINKLES!

For the record, I’m totally not into the over commercialized Valentine’s day that requires a hallmark card heart shaped boxed chocolates, and overpriced red roses.

I am, however, all for a day to remind those you love just how special they are. And I think a homemade card and cupcakes made with love are just the way to do that.

Yes, I said a homemade card. In the 5 minutes it takes to pick out a card out the store you can whip out your scissors, glue and colored paper to make your very own special card.

And don’t let your creativity stop there you should probably write a little poem on the inside for your love.

Ohh and a warning: these cupcakes may turn your tongue red! Enjoy! <3

Valentine Sprinkles Cupcakes
Yield: about 30 Cupcakes

Ingredients:
3 cups Flour
2 Teaspoons Baking Powder
1 1/2 Teaspoons Baking Soda
1/2 Teaspoon Salt
1 Cups Butter, softened
2 1/3 Cups Sugar
3 Large eggs
2 Tablespoon Vanilla Extract
1 1/4 Cups Half and Half
1/2 Cup Sprinkles

Preheat oven to 350.

In a large bowl sift together the flour, baking powder, baking soda and salt. In the bowl of your mixer begin beating the butter. Add the sugar and beat on medium until well combined. Slowly add the eggs and vanilla continually mixing. Next, alternately beginning adding the flour then half and half, about 1/3 at a time. Continue mixing until just combined.

Line muffin tins and fill 1/2 way to the top. (Be careful not to overfill!)

Bake at 350 for 18 minutes.

Red Buttercream Frosting
1 1/2 Cups Butter, room temperature
4 Cups Confectioners Sugar
1 Tablespoon Vanilla Extract
1 Tablespoon Half and Half
Red Gel Food Coloring

In your mixer beat the butter on medium speed for 5 minutes until light in color. Begin adding the Confectioners sugar 1 cup at a time, stopping halfway through to add the vanilla extract. Once all sugar is incorporated begin adding the red food coloring a couple drop at a time until desired color is reached. Beat for 2 minutes longer on medium high speed to get light and fluffy.

Frost cupcakes. Top with heart shaped peeps or other candy of your choice.
