Do you have places that elicit certain memories for you? For me, every visit to Florida reminds me of my Grandparents. It brings me back to winter vacations when I was 12 years old and so excited to leave snowy New England and spend a week in the warmth, swimming and going out to fancy dinners with my grandparents. So many happy memories.
And then I start to remember how swimming in the pool would turn into my brother continually holding my head under water and me feeling like I was drowning and gasping for breath every chance my head was allowed above the water line. I’m not sure why he found this fun, but for me it has just provided a life long fear of being alone in a pool with my brother.
Other than the daily drownings, my childhood vacation days in Florida were relaxing and fun.
As an adult I still go back to that same area of Florida every winter, only now it’s to visit my parents instead of my grandparents. While restaurants have changed names, and boardwalks on the beach have been updated, much of that Florida vacation feeling from my childhood still remains. And funny enough the first thing I crave when I wake up in Florida is not grapefruit, but the crumb coffee cake that grandpa used to serve every morning.
Since I tend to prefer to be out enjoying the warm sun while in Florida and not in the kitchen, making crumb cake was the first thing I did when I got back home.
Because I’m too lazy to slice things and I love individual servings I obviously made the traditional coffee cake into muffins. I also upped the cinnamon, just cause I love it.
At first bite of these muffins I knew it was a crumb cake that Grandpa would approve of. Moist cake, LOTS of crumbs, and a thick coat of powdered sugar. He’s smiling down on me from heaven right now, I just know it.
And incase you were worried, there were no pool drowning this trip. I kept a safe 15 foot distance between my brother and I in the pool at all times.
Cinnamon Crumb Muffins
2 1/2 Cups Flour
1/2 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Cup Sugar
3/4 Cup (1 1/2 Sticks) Butter , softened
2 Large Egg
1 Teaspoon Vanilla Extract
2/3 Cup Buttermilk
Cinnamon Swirl Ingredients:
1/4 Cup Sugar
1 1/2 Teaspoons Cinnamon
1/4 Cup Sugar
1/4 Cup Dark Brown Sugar
1 Teaspoon Ground Cinnamon
1/4 Teaspoon Salt
1 Cups Flour
1/2 Cup (1 Stick) Butter, softened
1/4 Cup Confectioners Sugar
Preheat oven to 350.
Start by mixing together the topping. In a medium size bowl whisk together the sugars, cinnamon, salt and flour. Using your fingers mix the butter into the flour mixture until it comes together. Let that sit.
In another small bowl mix together your sugar and cinnamon for the swirl. Set that aside and start the muffins.
For the muffin:
In a small bowl mix together the flour, baking soda, and salt.
In the large bowl of your mixer beat the butter and sugar together. Add the eggs and vanilla beating until combined. Alternately add the 1/3 of the flour mixture then 1/3 of the buttermilk with the mixture on low, continue to add 1/3 at a time until all mixed in.
Grease or spray your muffin tins. Fill each muffin cup 1/3 way up. Top with a sprinkle of cinnamon sugar (this is your swirl). Add another 1/3 of the batter so muffin cups are 2/3 full. Sprinkle a little more cinnamon sugar over the tops. Then sprinkle the crumb mixture over the top of each muffin breaking into small clumps as you go.
Bake for 25-30 minutes, inserting a cake tester/toothpick to make sure the center is done. Let cool. Then using a sieve sift the confectioners sugar evenly over the top.
