While I have been seriously slacking in the baking department lately, I have not been slacking in the cocktail department. It’s summer y’all!! The official season of cocktails. And really nothing tastes more fantastic after a long day at the beach than a refreshingly sweet ice cold beverage. And if you’ve ever spent cocktail hour at my house you know that cold beverage is most often a Mojito.
The mint in the backyard is doing fabulous this summer. It’s vibrant green, lush leaves, and rich fragrance only serve to further promote the making of Mojito’s. This is also the first summer where I scoured the internet to find an actual ‘Mojito Mint’ plant. The authentic Cuban mint variety (Mentha x villosa) only made it’s way into the U.S. recently. It’s the real deal people! And makes each Mojito OUT-OF-THIS-WORLD perfect!
And while there is absolutely nothing wrong with my perfect Mojito recipe (here if you want it), you know I’ve been on an infusion kick lately and I just had to play mad-scientist in the kitchen to see what other concoctions I could create.
The end product may be what drives you to make this recipe, but the evolution of the liquor is by far the coolest part.
Perfect summer ripe strawberries are are covered with white Rum. By day 3, your strawberries have turned albino and your rum is now vibrant red. It’s fantastical!!!

Strawberry Rum Mojito
4 Cups White Rum (I like Bacardi)
1 Lb Strawberries
Slice the stems off your strawberries. Place in a medium sized airtight glass container. Top with rum. Store in a cool dark place for 2-5 days (I only waited 3). Gently shake the container once or twice every day. When your patience has run out, or 5 days later, strain your rum into a pitcher using a fine sieve and a coffee filter or cheesecloth to catch any little bits. (Discard the strawberries.)
Ingredients (per drink):
2 Oz. Strawberry Rum
Mint, a large handful
Sparkling Soda Water
Blueberries (optional for decoration)
Place a large handful of mint into each medium size glass. Muddle the mint to crush and release the flavor. Fill the glass with ice. Pour 2 oz of strawberry rum into the glass. Squeeze in one lime wedge. Top with seltzer (about 2-3oz) to preference. Garnish with additional lime slice and blueberries if you’re feeling fancy. Cheers!
