Have we talked about how I have ‘Black Thumb’? That’s the opposite of a ‘Green Thumb’ right? The black thumb is the one that
kills turns all your plants black instead of green. Well, that’s the color thumb I have.
Over the past two months I have killed off 2 more plants. One at work, which is really pretty embarrassing because I feel like if you are not competent to keep a little plant alive, are you really competent to be in charge of millions of dollars of company money?? I feel like those two things may be related so I vowed to work on my plant caretaking skills, for my career, you know?
That resulted in plant number 2 biting the dust at home. It was a spawn of a friends plant that was given to me with the inspiring words “Don’t worry these plants are impossible to kill.” Maybe I mistakenly took that as a challenge. It took me two years, but I won! Bridget 1, plant 0!
Don’t worry I will keep trying, I faith that I can do it. I do still have a couple live plants in my house, one of which is a ‘Money Tree’ plant. I’ve had that sucker for four years and by golly I will keep watering and feeding that thing till it starts sprouting 100 dollar bills!! Incentive people, that is what drives us.
And when the incentive is the most amazingly delicious chocolate chip cookie ever, you better be ready to put in a little work and have a little patience.
Brown Butter. If you haven’t tried it, you are truly missing out. It makes everything better… vegetables, chocolate chip cookies, life… no exaggeration. So brown your butter before you make these cookies because the payoff will be worth it when you bite into the perfect golden brown cookie and taste the rich, nutty butter flavor. The next thing you need to do is have some patience. Make your dough and let it sit over night. You wouldn’t throw your steak on the grill without letting it marinate, so don’t throw your cookies in the oven without letting them marinate.
Now go and make these cookies cause no matter how bad a day you are having or how many plants you have killed these cookies will make up for it all!!
Brown Butter Triple Chunk Cookies
Makes about 3 dozen
1 Cup (2 sticks) butter (salted)
1 Cup Sugar
1/2 Cup Brown Sugar
1 Tablespoon Molasses
2 Teaspoons Vanilla
2 2/3 Cups Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Cup Chocolate Chunks (or semi-sweet chips)
1 Cup White Chocolate Chips
1 Cup Dried Cranberries
In sauce pan heat butter over medium-low heat continually whisking once it starts to bubble. Cook until it begins to brown about 5-10 minutes. Let the butter cool to room temperature.
Preheat oven to 350 degrees.
In bowl of mixer beat together browned butter, granulated sugar, brown sugar, molasses for 1 minute. Add in eggs and vanilla.
In a small bowl mix together flour, baking soda, and salt. Add it to the wet ingredients in the mixer and mix until blended well.
With a large spoon stir chocolate chunks, white chocolate chips and cranberries into dough.
Put dough in the refridgerator overnight (or at least an hour). The next day let the dough come to room temperature, about 30 minutes to an hour before scooping onto cookie sheets.
Drop dough by rounded tablespoonfuls (my scoop is closer to 2 Tablespoons) 2 inches apart onto cookie sheet. Bake for 12-15 minutes, or until cookies are just starting to brown. The centers will be soft.
Let cool for several minutes then remove from cookie sheet and place on wire rack to finish cooling.
